A Fritter Day

While have had a reprieve from the intense cold over the past couple of days, it has been instead, damp and cold. So for tonight's dinner I decided to slice up a zucchini I had in the fridge and make it into zucchini fritters. I mixed together some flour, black pepper, dried garlic and baking powder, then added bubbly water until I had a pancake like batter. I then coated each slice of zucchini with this mixture and fried it all in a shallow cast-iron pan. To this I added some quinoa I made in my handy-dandy insta-pot making a really warm dinner for a damp, cold night.
